Here with another recipe with basic ingredients. Perfect for morning breakfast, healthy and filling.
Ingredients
- Eggs - 2π₯π₯
- Carrot- 1/4 cup π₯ grated
- Tomato- 1/4 cupπ chopped
- Onions- 1 smallπ§ chopped
- Bell pepper - 1/4 cup diced.
- Salt
- Pepper
- Butter - 2 tbsps
- Bread - 2 slices
Method
π©π»π³ Take a pan. Heat 1tbsp of oil. Put the onions and then add the tomatoes. When the tomatoes have become soft add the carrots and bell peppers. Saute well until the mixture is a bit soft. This will take around 4 to 5 mins.
π©π»π³ Meanwhile beat the eggs for few minutes. Add salt and pepper as per your taste. Then add the cooked mixture of carrots,onions tomatoes and bellpeppers to the beaten eggs and mix well.
π©π»π³ Now take a slice of bread. Using a cookie cutter, cut a round shape in the middle of the bread. Keep the cut out bread portion seperately.( I used a cupcake tin) . This way we have created the pocket.
π©π»π³Heat your pan. Put 1 tbsp butter . Put the bread with the hole in it, on the pan and let it toast for few seconds. Flip over the toast. Now add the egg mixture slowly to fill the hole just enough. ( Dont add all of it at onceπ)
π©π»π³ Let it cook for 3 to 4 mins on low flame.
Now add the cut out portion of the bread slice on top of it.
π©π»π³ After you add the cut out piece of bread give it two mins , flip the whole toast together carefully with your spatula. Let it cook well on the other side on medium low heat.
Cook until done. It will take another 4 to 5 mins. Once done flip it over one last time.
π©π»π³ The pocket egg toast is ready!
Follow through to make another pocket toast in the same way. This recipe will yield two pocket egg toasts.
Easy to make and you can add your own variations and shapes to the bread.
