This delicious dish is a perfect melody of noodles with coconut curry/gravy accompanied by a variety of add ons ,making it a dish worth trying. Not only is it tasty but also has the perfect blend of flavours bursting your mouth.

Ingredients.🍲
Egg noodles
For the Garnish/toppings
- Boiled Egg noodles
- Eggs - 2 to 3 boiled
- Onions - 3 medium sized ,thinly sliced.
- Garlic cloves - 10-15 thinly sliced
- Green chillies- 2 pc sliced.
- Coriander leaves -handful chopped
For the Coconut Gravy or Curry
- Coconut milk -2cups
- Boneless Chicken - 300 grams diced into cubes
- Besan- 2 tbsps
- Ginger garlic paste- 1tbsp
- Coconut milk-2cups
- Besan- 2 tbsps
- Cumin seeds -1tsp
- Turmeric powder -1tsp
- Ginger garlic paste- 1tbsp
- Curry leaves -10 to 15
- Red dry Chilly - 2pcs
- Salt as per taste.
Egg Noodles- Boil the noodles according to the instructions given in the packet. Keep aside and let it cool.
Heat oil in a pan and start frying the onions, garlic cloves,green chillies one by one till they are nice and crispy. Take it out and keep it aside. Remember to fry them individuallly and together.Boil your eggs meanwhile and keep it ready.
For the coconut curry or gravy. Take a deep pan. Use the leftover oil from before ,add more if required. Let it heat.Add cumin seeds, red chillies and curry leaves. Saute for few seconds. Now add the ginger -garlic paste and cook for a little while. Make sure not to burn it. Add in the chicken cubes and saute it. Next add the besan or gramflour and turmeric powder mix well. Add salt as per taste. Add a little water if necessary so that it doesnt stick to the pan.
When the chicken is cooked, reduce the heat to low. Now add in coconut milk and mix well. Add salt as per taste.Let it simmer on medium low heat for about 15 mins. You will get a nice aroma from your curry . Check your curry, it will not be not too thin or too thick.Once done switch of the flame and let it sit for 5 mins.
For plating:
Firstly take boiled noodles in a bowl. On it pour your coconut curry or gravy . Add lime juice on top of it. Now add your fried condiments like the garlic ,onions and chillies. Add coriander leaves . Slice the boiled egg in 2 halves or quaters and place it beside the noodles.
Now Mix everything together well and simply enjoy! The dash of lime to the dish brings all the difference to it.
Tips*
- You can use veg noodles in place of egg noodles.
- You can add other toppings of your choice too like fried okra and spring onions.
- If using coconut powder follow the instructions on the package and make the coconut milk accordingly.
